What Japanese call 寒さば(Kansaba / winter mackerel) is mackerel from the cold season, when the fish stores fat for winter — richest oils, tender flesh, deep umami. Labeling "domestic kansaba" puts the fish first — select the fish, then season.

The chef thinking is in Kito yuzu salt × olive oil.

Mackerel is fatty; oil alone can feel heavy. Yuzu acts like citrus zest shaved over a finished plate — not to make it sour, but to use peel aroma and gentle bitterness to "cut" the fat. Salt pushes umami forward; olive oil wraps everything together.

The tasting path should be:

Rich kansaba fat and umami → olive-oil roundness → yuzu aroma at the finish, suddenly clean.

Unlike water-boiled or miso mackerel, it doesn't rely on sweetness or heavy sauce. It balances with fat, salt, and citrus aroma — like a modern Japanese small plate.

If I were cooking, I wouldn't do much to it.

Chill lightly; open with grated daikon and shiso; or over hot rice with a spoon of the yuzu olive oil from the tin. The fish is already the main course — everything else just helps.
