If No. 01 is the purest side of the sardine, No. 03 adds a little Portuguese temperament.
Traditional sardines in olive oil with Malagueta chilli, a staple of Portuguese cooking. The heat is there to lift the richness of the fish rather than overpower it: fresh, meaty sardine first, then a warmth that builds with every bite.
The balance is what matters: the fish stays the star, and the chilli simply makes you reach for the next bite.
Serving is simple. Place the sardines on toasted sourdough and drizzle with a little of the chilli olive oil from the tin. For more, add tomato or a few drops of lemon juice.
Some heat is a challenge; this kind makes you want another tin.
