Hatch - El Paraiso Geisha Washed 200g
Finca El Paraíso is located in Cauca, Colombia, and is a renowned family coffee farm led by Diego Bermúdez, Daniel Bermúdez, and their family. Founded in 2008, it has become a leader in innovative coffee processing, using proprietary techniques, microbiology research, advanced biocatalysis, and its signature "thermal shock" method.
From El Paraiso:
"To ensure maximum sweetness and quality, only fully ripe Geisha cherries are hand-selected. Cherries are first sanitized with ozone before fermentation begins, ensuring a contamination-free environment. After immediate pulping, they undergo 24 to 36 hours of controlled anaerobic fermentation in sealed tanks, inoculated with Lactobacillus to enhance silkiness and sweetness. This is followed by a double thermal wash — first immersed in 48°C hot water, then rapidly chilled with 4°C cold water — locking in delicate aromatic compounds. Finally, the coffee is dried with dehumidifiers for 30 to 40 hours for even, controlled moisture loss."
