Red pepper and olive oil give the sardines a subtle vegetable accent. The fish remains the focus, with the red pepper like a small stroke of colour – light and understated.
Serve with roasted aubergine, a little sherry vinegar and parsley on a small plate for a simple tapa. For more pepper flavour, add a few strips of roasted pepper and paint in your own taste.
